Jerk Sauce for Pork or Chicken

One of my favorite recipes.

1 med onion coarsely chopped
3 med scallions coarsely chopped
2 scotch bonnets chilies coarsely chopped {or Serrano's, etc. depending on how hot you want..}
2 garlic cloves chopped
1 tablespoon five spice powder
1 tablespoon allspice berries, coarsely ground
1 tablespoon coarsely ground pepper
1 teaspoon dried thyme, crumbled
1 teaspoon freshly grated nutmeg
1 teaspoon salt
1/2 cup soy sauce
1 tablespoon vegetable oil

In a food processor blender, combine the onion, scallions,chilies, garlic, five spice powder, allspice, pepper, thyme, nutmeg and salt.

Process to a fine paste

In a small bowl, mix the soy sauce and oil.

With the machine running, add the soy sauce and oil mixture in a steady stream.

In a large shallow dish, add the {chicken or pork} and turn to coat.

Cover and refrigerate overnight.

Cook over a Grill or in oven at 500 degree for 30-40 minutes..for the chicken.
